Three Special Indian Delicacies For Diwali - The Festival Of Lights

I was first treated to this fantastic dish when I was studying at CSU Sacramento in the mid 80s. At the time, there was an Indian restaurant - the only Indian restaurant in town - that my friends and I visited every weekend.

In a food processor, add all the spices along with the vinegar and blend the ingredients into a course paste. This can all be done a day ahead of time.



Bayberry wax costs about 4 times that of Beeswax. It takes 15 pounds of Bayberries to make one pound of wax. It has a warm, earthy fragrance reminiscent of newly mown hay, and dries to a lovely olive green color. A small amount can be added to other waxes to make them harder & impart its green color. This is a pro as there are no other natural colorants for candles apart from the yellow of the beeswax. All natural candles, that is totally natural candles, are white unless they have beeswax or bayberry wax added.

Place any amount of unsalted butter in a deep porcelain, Pyrex or stainless steel pan over medium-low heat. (Be sure that the butter does not scorch while melting) Allow complete melting to occur, and then reduce the heat to low.

In the same pan add the rest of the Ghee or oil and throw in the onions, tomatoes and chopped chilli peppers. Cook until the onion is transparent and just beginning to turn a light brown. Add the garlic and cook for a further minute.



Beauty- A paste of turmeric, sandalwood and water can be used all over the body and face. You can use the raw turmeric here and grind it to make the paste. This leaves a glow on the skin. A paste using Ambehalad, a variety of turmeric, is very effective in healing acne, pimples etc. A pinch of turmeric added to any cream or facepacks also gives excellent results. It can also be applied to any unsightly scars, spots and marks on the these details face and body.

Ghee can be stored at room temperature for several weeks, and it keeps indefinitely when kept in the refrigerator. Put a teaspoonful (per person) into food or on food after cooking it. Ghee can be used in the same way as cooking oil, in place of butter, or as a digestive aid dripped over food.
